Shoowee! Another long and tiring day in the dairy. Showed up at 7am and didn't leave until 5:30. How can I even begin to list all the things we did? First we (Steve my boss and I) pasteurized milk and cleaned the bulk tank. Then around 9:30 I milked the goats who were super well-behaved so it only took about 2 hours. Then I cleaned the milk parlor but not any of the pipes because we were pasteurizing at the time and there is only 1 hot water heater, so I ate some lunch (excellent!). When I came back I cleaned the pasteurizer and the milking system, then cut the curd on some camembert and farmhouse cheese that Steve had started while I was milking.
The rest of the afternoon was spent cleaning cleaning and cleaning some more, plus packaging some Goat'zarella and hanging all the farmhouse cheese we'd made to drain the whey out of it. I made the brine for our Raw Feta and put it in there to age for 60 days. How friggin' crazy is it that in 60 days it will be July and before too long I'm going to be 23! I never thought I would be 23.
I also prepared my reconciliation sheet for the farmer's market on Wednesday, it was fun to do meticulous work with spread-sheets and numbers for a change. Now it's closing in on 9 o'clock and I'm as tired as can be. Roscoe's been my bed-dog recently, and I don't believe tonight will be any different.
